Chicken Cordon Bleu

Elegant comfort food that's easier than it looks

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 slices Swiss cheese
  • 4 slices ham
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1 Preheat oven to 350°F (175°C).
  2. 2 Place chicken breasts between plastic wrap and pound to 1/4 inch thickness.
  3. 3 Season both sides with salt and pepper.
  4. 4 Place one slice of ham and one slice of cheese on each chicken breast.
  5. 5 Roll up tightly and secure with toothpicks.
  6. 6 Dredge each roll in flour, then egg, then breadcrumbs.
  7. 7 Heat butter and oil in a large oven-safe skillet over medium-high heat.
  8. 8 Brown chicken rolls on all sides, about 3-4 minutes per side.
  9. 9 Transfer skillet to oven and bake for 25-30 minutes until chicken is cooked through.
  10. 10 Remove toothpicks before serving.
