Chicken Cordon Bleu

Ingredients
- • 4 boneless, skinless chicken breasts
- • 4 slices Swiss cheese
- • 4 slices ham
- • 1/2 cup all-purpose flour
- • 2 eggs, beaten
- • 1 cup breadcrumbs
- • 2 tbsp butter
- • 2 tbsp olive oil
- • Salt and pepper to taste
Instructions
- 1 Preheat oven to 350°F (175°C).
- 2 Place chicken breasts between plastic wrap and pound to 1/4 inch thickness.
- 3 Season both sides with salt and pepper.
- 4 Place one slice of ham and one slice of cheese on each chicken breast.
- 5 Roll up tightly and secure with toothpicks.
- 6 Dredge each roll in flour, then egg, then breadcrumbs.
- 7 Heat butter and oil in a large oven-safe skillet over medium-high heat.
- 8 Brown chicken rolls on all sides, about 3-4 minutes per side.
- 9 Transfer skillet to oven and bake for 25-30 minutes until chicken is cooked through.
- 10 Remove toothpicks before serving.
